Are you looking for a lower calorie and lower carb version of roasted potatoes? Turnips contain about 36 calories per cup, compared with 87 calories per cup for russet potatoes. They also have fewer carbohydrates. Each cup of turnip contains about 8 grams of total carbohydrates, while an equivalent serving of potatoes contains 20 grams.
However, turnips have many of the same nutrients in potatoes and in some cases have more.
1 cup of turnips contains approximately…
- Fiber: 2 grams.
- Protein: 1 gram.
- Vitamin C: 30% of the Daily Value (DV)
- Folate: 5% of the DV.
- Phosphorus: 3% of the DV.
- Calcium: 3% of the DV.
I love this very simple recipe for Roasted Turnips. You can always add your favorite spices to it for variety but it is delicious just as it is.
Ingredients
- About 3 medium turnips, peeled and cut into 1 inch cubes.
- 2 Tbsp. Olive Oil
- 1 Tbsp. chopped garlic
- dash of salt & pepper to taste
- 1 tsp. of parsley for color (optional)
In a large bowl combine turnips, olive oil, garlic, salt and pepper. Spread on to a baking sheet and bake at 375 for about 25-30 minutes or until turnips are tender and have started to brown. Turn them a couple of times while cooking so that they brown evenly. When they are finished you can sprinkle the parsley on top to give the dish some color.
* They will closely resemble roasted potatoes when cooked. However, be aware that turnips do have a taste of their own so they will taste like turnips not potatoes.
