Check out this amazingly easy vegan goulash recipe. If you do eat meat or dairy you can always substitute them.

Ingredients

  • 1 pound of whole wheat pasta ( your choice)
  • 1 pound of vegan meat crumbles
  • 1 large eggplant
  • 2 medium green peppers chopped
  • 8-10 Mushrooms sliced
  • 3 cloves of garlic minced
  • 1 medium onion chopped
  • 45 ounce jar of tomato sauce
  • 8 ounce bag of vegan mozzarella cheese

Instructions

  • Boil water and cook pasta according to directions on the box
  • Peal and cut eggplant into 1 inch cubes. Bake for about 20 minutes.
  • Sauté green peppers, onions, garlic and mushrooms in 2 tablespoons of olive oil.
  • Add vegan meat crumbles, eggplant and tomato sauce.
  • Combine sauce with pasta. Top with vegan cheese and bake for 10 minutes until cheese is melted.
