Here is a great recipe for when you are trying to eat light but still want to get some much needed nutrients in. This soup is warm and filling but has very few calories. This soup is great when you are craving some much needed comfort food.

Ingredients

• 1/2 head of cabbage (red or green) sliced into long shreds

• 1 1/2 cups of carrots cut into 1 inch pieces

• 1 1/2 cups of diced celery

• 1 whole onion chopped

• 2 cloves of garlic, minced

• 2 tbsp. olive oil

• 4 cups of vegetable broth

• 14.5 oz can of diced tomatoes ( or fresh tomatoes )

• 1/2 tsp. cumin

• Dash of cayenne pepper (optional)

• Salt and pepper, to taste

Sauté carrots, celery, onion and garlic in oil until they begin to soften. Add all of the remaining ingredients and cook until the vegetables are tender

*Other non starchy vegetable may be added for variety.
