This is one of my favorite summer salads. In this salad I have the “Three Sisters” ( Corn, beans and squash) along with any other fresh veggies I have in the fridge. The Three Sisters refers to a traditional planting method used by the Native Americans. They would plant corn, beans and squash together to create a balanced and nutrient rich soil. Combining these food is not only beneficial to the soil but is also a great way to ensure your body is getting all of the nutrition it needs.
Salad Ingredients
- 1 Cup of Corn cut off the cob
- 1 Cup Black Beans
- 1 zucchini ( summer squash) sliced
- 3 Cups of Lettuce
- 2 Tomatoes cut into quarters
- 1/4 Onion finely sliced (optional)
Instructions
Combine all ingredients into a salad and top with your favorite dressing- serves 2 people
